Ingredients for 2 servings:

  • 500 g sugar, it can also be brown cane sugar
  • 1 tsp cocoa powder or
  • 1 liter of juice (quince juice)

Put the sugar (you can use more as indicated above) in a pan and let it caramelize. Continue stirring the mixture and add the cocoa or quince juice. Caution, it’s very hot, risk of burns! Pour the thick mixture onto a cold surface, such as a marble slab. A baking sheet lined with buttered parchment will also work. The pan should be cleaned immediately after use. Then break everything up into small pieces with a meat grinder. Please do not lick or touch anything until the mixture has cooled – risk of burns! If you like, you can sprinkle powdered sugar or other decorations, such as ground nuts or almonds, on top before the mixture has cooled. The candies may not look as pretty as the store-bought ones, but at least you know 100% what’s in them. Instead of quince, you can also use any other pressed juice (cherry, currant, strawberry, etc.), or even herbal infusions (tea), such as sage, elderflower, etc. The time required can take several hours, depending on the quantity and consistency, so this is an approximate time.
