Herbal Potato Soup

The perfect herbal potato soup recipe with a picture and simple step-by-step instructions.

  • 4 medium sized Potatoes
  • 3 medium sized Onions
  • 3 medium sized Vegetable oil
  • 0,5 l Vegetable broth
  • 200 g Arugula
  • 1 bunch Fresh dill
  • 1 bunch Fresh smooth parsley
  • 1 packet Cress (garden cress)
  • 200 ml Vegetable cream
  • Salt, pepper, nutmeg
  • 100 g Smoked tofu
  1. Dice the potatoes, onions and garlic and sauté in a little oil.
  1. Deglaze with vegetable stock and simmer for 15 minutes. In the meantime, roughly chop the herbs and rocket and set aside some of the cress.
  1. Dice smoked tofu and fry in a little oil until crispy.
  1. Add the herbs and rocket to the soup and let it steep for approx. 3 minutes. Remove the soup from the heat and puree with the cream – not too fine. Season to taste with salt, pepper and nutmeg.
  1. Serve sprinkled with smoked tofu and cress.
