Herbal Potato Soup
The perfect herbal potato soup recipe with a picture and simple step-by-step instructions.
- 4 medium sized Potatoes
- 3 medium sized Onions
- 3 medium sized Vegetable oil
- 0,5 l Vegetable broth
- 200 g Arugula
- 1 bunch Fresh dill
- 1 bunch Fresh smooth parsley
- 1 packet Cress (garden cress)
- 200 ml Vegetable cream
- Salt, pepper, nutmeg
- 100 g Smoked tofu
- Dice the potatoes, onions and garlic and sauté in a little oil.
- Deglaze with vegetable stock and simmer for 15 minutes. In the meantime, roughly chop the herbs and rocket and set aside some of the cress.
- Dice smoked tofu and fry in a little oil until crispy.
- Add the herbs and rocket to the soup and let it steep for approx. 3 minutes. Remove the soup from the heat and puree with the cream – not too fine. Season to taste with salt, pepper and nutmeg.
- Serve sprinkled with smoked tofu and cress.
