Herbal Quiche

The perfect herbal quiche recipe with a picture and simple step-by-step instructions.

  • 400 g Flour
  • 2 Eggs
  • 160 g Butter
  • 0,5 tsp Salt
  • 50 ml Water cold
  • 1 bunch Mixed herbs
  • 150 g Ham strips
  • 4 Eggs
  • 200 g Whipped cream
  • 200 g Sour cream
  • 150 g Grated Gouda
  • Salt
  • Pepper
  • Nutmeg
  1. Mix the flour and salt in a bowl. Cut the butter into small pieces, add and rub under the flour with your fingertips. Add eggs and water and knead quickly to form a smooth dough. Shape into a ball, wrap in cling film and refrigerate for at least 1 hour.
  2. Roll out the quiche dough on a floured work surface into a circle (32 cm Ø). Line a greased tart pan (28 cm Ø) with the dough, pressing down the edge well. Chill for 30 minutes.
  3. Prick the dough base several times with a fork, cover with baking paper and weigh down with dried legumes. Pre-bake in the preheated oven at 200 degrees (gas 3, convection not recommended) on the middle shelf for 20 minutes. Remove the pulses and baking paper.
  4. Finely chop the herbs. Mix with ham, eggs, cream, sour cream and cheese. Season to taste with salt, nutmeg and pepper.
  5. Turn the oven down to 180 degrees (convection 160 degrees). Spread the egg mixture on the quiche dough. Bake for 35-40 minutes. Cut into pieces and serve.
