Herbs – cheese – baked potatoes

Ingredients for 4 servings:

  • 1 kg potatoes (small new potatoes)
  • 1 tsp butter
  • 2 bunches of basil
  • 1 bunch of chives
  • 1 bunch of parsley
  • 100 g cheese, grated (Allgäu Emmental)
  • 3 tbsp Parmesan, grated
  • 2 tbsp olive oil
  • 6 tbsp oil (sunflower or safflower oil)
  • salt and pepper
  • 4 garlic cloves, alternatively
  • 2 bunch wild garlic and
  • 3 small onions

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Brush the potatoes under running water, halve them, and place them cut-side down in a shallow, buttered baking dish. Bake in a preheated oven at 200°C for 15 minutes. Wash, dry, and finely chop the basil, chives, and parsley. Mix with the cheese, add the oil, and season with salt and pepper. Peel the garlic cloves or onions and slice into thin strips. If desired, wash the wild garlic and slice it into thin strips. Turn the potatoes over and place 2 slices of garlic or onion with the wild garlic and 1 teaspoon of the cheese and herb mixture on the cut side. Bake at 200°C for a further 5-10 minutes. Sprinkle sparingly with coarse sea salt before serving.
