Hermis tomato salad with feta

Ingredients for 4 servings:

  • 1 kg vine tomatoes
  • 5 spring onions
  • 150 g feta cheese
  • 2 tbsp herb vinegar
  • 5 tbsp rapeseed oil
  • e.g. salt and pepper (tomato salt)

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Quarter the tomatoes and finely chop the spring onions. Finely chop the feta cheese. Combine everything in a large bowl and mix with the vinegar, oil, and seasonings. Cover and let it chill for a few hours before serving.
