  • 3 eggs
  • 1 small potato(s)
  • 1 small tomato(s)
  • 1 spring onion(s)
  • 3 slices of bacon
  • some olive oil
  • Salt and pepper, black

A very simple dish that makes the perfect start to the weekend. Wash the potatoes thoroughly, halve them, and slice them thinly. You can peel them first if you like, but it’s not necessary. Heat a little olive oil in a non-stick pan and fry the potato slices over medium heat. After about 5 minutes, add the bacon strips to the pan. In the meantime, wash the tomato, halve it, and remove the green stem. Then quarter the tomato or cut it into small pieces. Wash and trim the spring onions. Slice the green parts into thin rings. Add the tomato pieces and spring onion rings to the pan and toss briefly. Crack the eggs over the top and cook until cooked through. Finally, season with a little salt (be careful with the bacon) and freshly ground black pepper. Vegetarians can, of course, omit the bacon. Then it’s a heroine’s breakfast.
