Herring salad according to Grandma Else

Ingredients for 4 servings:

  • 2 large jars of rollmops or Bismarck herring
  • 500 g natural yogurt
  • 200 g sour cream
  • 1 large onion(s)
  • 1 large apple, sour
  • 1 jar of pickled gherkins (approx. 400 g)
  • pepper
  • possibly salt

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

At the beginning of preparation, I’m a bit conservative with the onion, apple, and gherkins. I adjust the final amount to taste. Therefore, I prefer to add less to the salad at first and add more as needed when seasoning. Mix natural yogurt with sour cream. Chop the onion and apple, mix them in, season with a little pepper, and mix well. I use both ground pepper and freshly ground pepper from the mill. Chop the gherkins rolled in the rollmops and add them to the yogurt mixture. If using, trim the dorsal fin from the rollmops, chop the rest, and add them to the other ingredients. Chop another 5-7 gherkins and add them. Season again with pepper, mix well, and season to taste (I almost never use salt, but it’s a matter of taste). If desired, add more chopped onion, apple, or gherkins. Let it marinate in the refrigerator. Serve with potatoes.
