Herring Salad Old Berlin Way

- 4 Medium sized Salted herrings, fresh
- 600 g Potatoes, boiled, from the day before
- 3 Size Apples, pitted
- 120 g Roast pork, cold
- 80 g Salami, Hungarian, air-dried
- 2 Medium sized Pickles, sour, from the barrel
- 1 Medium sized Onion, white, finely grated
- 3 tablespoon Vegetable oil
- 3 tablespoon White wine vinegar
- 2 teaspoon Mustard, spicy, e.g. Bautzener
- 1 teaspoon Sugar, white
- 0,5 bunch Dill, fresh
- 0,5 bunch Parsley, fish, smooth
- Salt
- Pepper, white, fresh from the mill
- Soak the salted herrings for a few hours, then cut them into small pieces.
- Peel the boiled potatoes and cut them into slices.
- Cut all the ingredients, the pitted apples, the cold roast pork, the air-dried Hungarian salami and the pickles into small cubes.
- Now mix everything with the white, finely grated onion, the vegetable oil, salt and white pepper.
- Mix the herring milk with the white wine vinegar, hot mustard and white sugar, pour through a sieve over the salad.
- Chill for two hours before serving.
- Finely chopped, fresh dill tips and fresh parsley refine the taste.
