Fish – Herring Salad

- 6 piece Herring fillets
- 3 piece Spring onions fresh

- 0,25 teaspoon Vanilla sugar
- 1 Red pepper
- Cut the herring into bite-sized pieces and place in a container. Wash the spring onions then cut into rolls, cut the onion into slices, add to the fish, finely chop the fresh bay leaves and stir in, TIP .. If you have dried leaves, just put in the whole leaves. They are too hard. Stir in the vinegar, oil and sugar, season to taste and let it steep. I don’t use packaged matjes, but get the loose from the fishmonger, It makes a difference, if you don’t get any you can of course also take packaged ones
