Herring salad with beetroot

Ingredients for 4 servings:

  • 200 g salted herring(s) (about 2 salted herrings)
  • 100 g beetroot (canned)
  • 1 cucumber(s) (sour cucumber)
  • 50 g mayonnaise
  • 1 tbsp juice (raspberry or currant juice)

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Rinse the herring, debone, and skin it, then dice the fillets, beetroot, and cucumber. Mix the mayonnaise with the juice and carefully stir it into the salad ingredients.
