Herring salad with curry sour cream sauce

Ingredients for 2 servings:

  • 3 lettuce hearts (romaine lettuce)
  • 1 cup sour cream
  • 3 cans of fish (herring in curry sauce)
  • 1 cucumber(s)
  • curry powder
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

quick and easy

Cut the lettuce into bite-sized pieces, wash, spin dry, and place in a large bowl. Wash the cucumber and also cut it into bite-sized pieces. Remove the herring fillets from the cans and roughly chop them (I do this with salad servers) in the salad bowl, on top of the lettuce leaves. Pour the curry sauce from the can into a bowl or measuring jug and mix with the sour cream. Season with salt, pepper, and curry powder and pour over the salad. Mix everything well and serve. We usually eat the salad as it is, without bread or baguette, but that goes very well with it too. You can, of course, add other vegetables like peppers, tomatoes, or even pineapple.
