Ingredients for 20 servings:

  • 500 g flour, type 405, double sieved
  • 500 g semolina – sugar, extra fine
  • 500 g butter (NOT clarified butter or margarine)
  • 1 pinch of salt
  • 2 pkt. vanilla sugar, real
  • 9 eggs (total without shell approx. 500 g)

Original name: ZOCKERWÄFFELCHER

Beat the butter, sugar, and salt until fluffy. Gradually crack the eggs, one at a time, into a cup and add them to the pan. Continue whisking vigorously until every last grain of sugar has melted. Carefully fold in the double-sifted flour with a fork. Heat a waffle iron (a special waffle iron) and add a little butter. Pour in the batter using a teaspoon, close the waffle iron, and bake. Roll the “Zockerwäffelchen” into pointed cones (waffles) and let them cool on a wire rack. These waffles will keep for weeks in a tightly sealed tin. In our case, however, they are eaten in no time.
