Ingredients for 8 servings:

  • 8 egg yolks
  • 125 ml cream
  • 3 tbsp rum
  • 1 pinch of anise powder or cinnamon powder
  • 500 g wheat flour
  • 300 ml oil or clarified butter for frying

Instructions

Working time approx. 25 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 55 minutes

Whisk the egg yolks with the cream, rum, anise or cinnamon, and salt. Knead in the flour. The dough will be rather firm. Let it rest for 1 hour before forming it into small balls, which you then roll out into wafer-thin discs. Place the discs in the hot oil, place a fork in the center of the dough discs, and twist the fork slightly during baking. Serve with fruit sauce.
