Ingredients for 5 servings:

  • 1 goose, 4-5 kg, fresh or frozen
  • 2 apples, sweet
  • 3 bunch mugwort, dried
  • 500 ml water, boiling
  • 500 ml goose stock
  • 3 tbsp Flour , 405
  • Salt
  • pepper
  • 125 g butter

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Wash the goose and pat dry. Next, detach the wings and neck. Remove and reserve the giblets and fat. Now quarter the two apples and remove the cores. Place the goose on its back on a deep baking tray, then arrange the fat, giblets, neck, wings and mugwort around the goose on the baking tray. Place the apples inside the goose. Pour half a liter of boiling water over the goose. Place in the oven preheated to 180°C for approx. 30 minutes. Then turn the goose onto its breast side and reduce the oven to 160°C. Let the whole thing sizzle for 1 hour, basting frequently with the stock from the baking tray. Finally, place the goose back on its back and finish cooking for another 1 hour at just 140°C. About 15 minutes before the end of the cooking time, pour a cup of cold water over the goose; this will make the skin nice and crispy. When everything is ready, fry the wings, neck and innards in a deep pan or pot with butter until dark, then pour in the stock and let it simmer a little. Finally, sieve the sauce and thicken it with the flour.
