Ingredients for 1 servings:
- 500 g flour
- 5 g sugar
- 5 g butter or margarine
- 10 g salt
- 10 g dry yeast
- 300 ml water
- 1 kg tomatoes
- 1 onion(s), depending on size
- 4 cloves garlic
- 4 tbsp olive oil
- 1 bunch basil or parsley
- salt and pepper
- some chili, maybe
- Flour for the work surface
- some butter or margarine for spreading
- possibly mozzarella or goat cheese
Instructions
Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 40 minutes; Total time approx. 2 hours
makes 4 baguettes
Put the flour, sugar, butter or margarine, and salt (don’t be surprised by the small amounts, it’s true) into a bowl. In another bowl, dissolve the yeast in lukewarm water (2-3 minutes). Add the yeast-water mixture to the dough and knead thoroughly for about 5 minutes. Cover the bowl with a kitchen towel and let it rise in a warm place for about 30 minutes. While the dough is rising, we can prepare the bruschetta tomatoes. To do this, dice the tomatoes (to your preferred size). Finely dice the onions. Finely chop the garlic, add the oil, and mix everything together. Season with salt and pepper (I always add a little chili). Finally, finely chop the basil or parsley, fold it into the bruschetta, and chill. In the meantime, the dough should have risen well. Now divide it into 4 equal parts and knead them thoroughly again on a floured surface. Now form the dough into round or oval (whichever you prefer) rolls about 1.5 cm – 2 cm high and let them rest on a baking sheet, covered with a towel, for about 30 minutes. Preheat the oven to 200°C (fan oven) and bake the baguettes for about 20 – 30 minutes until golden brown. Once the baguettes have cooled slightly, cut them in half and spread with a little butter or margarine. Then top the baguettes with the bruschetta (if you like, you can also add sliced mozzarella or goat cheese) and let them heat up in the oven for another 10 minutes. It’s a truly delicious dish and is great for preparing for a party. You can also make two baguettes from the dough, which will be the perfect size for the party. The dough also makes a good pizza dough (same process as for the rolls).
