with chili cheese sauce and red wine balsamic onions
For homemade burger buns, use the following recipe: http://www.chefkoch.de/rezepte/2708511423773201/Brioche-Burger-Bun.html. Otherwise, use brioche burger buns instead of the dry standard buns. For the red wine and balsamic onions, peel the onions, cut them into slices, and halve the rings. Put the sugar in a saucepan and let it caramelize slightly. Add the onions and deglaze with the red wine and balsamic vinegar. Let it simmer gently, adding a little water if necessary and letting it reduce again. The onions should be nice and soft and creamy when cooked. For the chili cheese sauce, put the sliced cheese in a bowl and heat in the microwave for a few seconds. Add a little milk and Tabasco. Quickly mix with a flat whisk until smooth. Chill in the refrigerator. Use fresh chilies, if desired. For the patties, season the fresh ground beef generously with salt and pepper. Press into two equal-sized patties, either by hand or using a burger press. Sear the patties in a neutral-tasting oil and cook for about 3 minutes per side until medium-rare. Briefly toast the buns in a little butter in a pan. Brush with sauces, if desired. Add the romaine lettuce and tomato slices to the patty. Spread the chili cheese sauce over the patty. Once heated, it will melt beautifully. Top with the red wine and balsamic onions and serve. The burger tastes great with homemade fries, wedges, or sweet potato fries. Approximately 800 kcal per serving.
