Eggplant Pizza

Ingredients for 2 servings:

  • 1 eggplant(s) (200 g)
  • oil
  • 150 g minced beef
  • 4 sprigs of mint
  • 1 clove(s) garlic
  • salt and pepper
  • ½ red bell pepper(s)
  • ½ bell pepper(s), yellow
  • 100 g mild sheep’s cheese
  • 1 bag of baking mix for pizza dough (230 g)
  • ½ can/n tomatoes, seasoned, for pizza

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash and trim the eggplant and slice it crosswise. Fry in batches in hot oil and drain on kitchen paper. Brown the minced meat in hot oil. Set aside a few mint leaves and chop the rest. Peel and press the garlic, stir it into the minced meat along with the chopped mint, and season. Preheat the electric oven to 200 degrees Celsius. Quarter the peppers, trim and wash them, and cut them into thin strips. Crumble the feta cheese. Prepare the pizza dough according to the package instructions. Roll out into a round shape and place on a baking sheet lined with baking paper. Spread with the pizza topping. Arrange the minced meat, eggplant, and peppers on top. Sprinkle with feta cheese. Bake in the oven at 200 degrees Celsius for about 20 minutes. Garnish with mint leaves.
