Homemade ketchup

Ingredients for 4 servings:

  • 2 kg tomatoes, ripe
  • 250 g onion(s)
  • 1 tbsp salt
  • 100 g sugar
  • 4 tbsp wine vinegar
  • 1 tsp white pepper, freshly ground
  • 1 tsp mustard seeds, ground
  • ½ tsp ginger powder
  • ½ tsp allspice powder

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Wash the tomatoes, remove the stems, and cut them into chunks. Peel and finely chop the onions. Combine all ingredients, including the chopped onions and tomatoes, in a deep, heavy-bottomed pot and simmer for about 45 minutes. Strain the mixture through a sieve. Return the tomato paste to the pot and simmer uncovered until thickened. Season to taste and pour into hot, rinsed, wide-necked bottles. Seal immediately while still hot.
