Ingredients for 4 servings:
- 1 large onion(s)
- 2 stalks celery
- 30 ml water
- ½ tsp salt
- Baking spray (fat-free cooking spray)
- 400 g tomatoes, chopped (can)
- 300 g tomatoes, pureed
- 1 bell pepper(s), red, roasted (jar)
- 2 tsp soy sauce
- 2 tbsp red wine vinegar
- 1 tbsp, heaped mustard, medium hot

Finely chop the onions, celery, and bell pepper. Combine the onions, celery, and salt with water in a medium saucepan. Spray with cooking spray and simmer on low heat for 15-20 minutes. Add the chopped and crushed tomatoes, bell peppers, soy sauce, vinegar, and mustard, and simmer for 45 minutes. Blend thoroughly with a blender. Strain through a fine-mesh sieve. Keeps refrigerated for up to 2 weeks. A popular sauce for countless dishes. Absolutely sugar-free!
