Ingredients
- 5 Pc. Egg yolk
- 1 Pc. Egg
- 2 tbsp Olive oil
- 1 pinch Salt
- 500 g Wheat flour type 405
- 1 Pc. Winter truffle
- Freshly grated Parmesan
- Truffle oil
- 1 tbsp Butter
Instructions
- To prepare the pasta dough, place the flour on the work surface. Make a well in the middle of the flour and add the egg yolks and an additional egg. In addition, two tablespoons of oil and a little more than a pinch of salt. The salt makes the dough rougher and enhances the taste. A tip from the Italian: If you want the pasta to have an even more intense, yellow color, simply add a pinch of turmeric.
- Now all ingredients must first be whisked and then kneaded well. This can take up to ten minutes. The more intensely and longer the dough is kneaded, the better it will be. It is done when it has got a nice yellow color and is no longer sticky. Then wrap it in cling film and let it rest for half an hour at room temperature.
- Then turn the pasta dough through the pasta machine. The finished tagliatelle need about 2 minutes in hot water.
- Then drain the pasta and heat a small ladle of the pasta water in the pan. Add butter. As soon as the butter has melted, rub some truffle into the pan. Put the drained pasta in the pan and mix with the melted truffle butter. Add a dash of truffle oil for a more intense flavor. Arrange the pasta on the plate. Grate fresh truffle over it and add some grated Parmesan cheese.
