Bottles glasses

  • Bottles and glasses to wake up

The glasses

  1. I put the glasses through the dishwasher. I boil the lids or the rubbers. Put everything ready next to the stove. A Passier cloth, an empathetic funnel and a ladle, everything is ready. A large bowl for the meat parts is best with a sieve. Gloves or pot holders are also useful

The broth

  1. Wash the soup chicken and the chicken parts. I have a large saucepan with a sieve insert (still had to take a second saucepan) So: Put the meat and the parts in the pots in equal parts, add the spices, the onions, carrots and the parsley root. I like to put a piece of parchment paper as a lid on the pot and let the liquid simmer slowly. Now it takes time, a lot of time. A good 3-4 hours. So the strength comes into the broth
  2. Then, when the meat comes off the bones, I lift it out, put it in a bowl and let it drain. I boil the broth again. Using the Passier cloth and the funnel, I filter it straight into the glasses. Now they can cool down and wait for their use, it is always worth having a supply.
