Homemade Pumpkin Mustard

Mustard is made from pumpkin pulp, jam sugar, mustard seeds, and hot mustard.

Ingredients

For the mustard:

  • 1 small lemon, unwaxed
  • 350 grams of pumpkin
  • 250 g preserving sugar 1:1
  • 25 g mustard seeds, ground
  • 25 g hot mustard
  • 1/2 tsp salt

Preparation

  1. Wash the lemon, dry it and finely grate the zest. Squeeze lemon. Place lemon zest, lemon juice, and 30ml water in a small saucepan and simmer for 5 minutes. Take it from the stove and let it cool off.
  2. Remove the pumpkin from the seeds and the fibrous inside, peel and grate coarsely (makes about 250 g).
  3. Mix the pumpkin shavings with the preserving sugar in a saucepan. Cook over medium-high heat, stirring, for 4 minutes.
  4. Put the mustard flour, mustard, salt, and lemon juice in a bowl and mix into a smooth cream. Add the cream to the pumpkin and continue to cook for 1 minute while stirring. Season to taste, pour into jars, seal and allow to cool.
