Mustard is made from pumpkin pulp, jam sugar, mustard seeds, and hot mustard.

Ingredients
For the mustard:
- 1 small lemon, unwaxed
- 350 grams of pumpkin
- 250 g preserving sugar 1:1
- 25 g mustard seeds, ground
- 25 g hot mustard
- 1/2 tsp salt
Preparation
- Wash the lemon, dry it and finely grate the zest. Squeeze lemon. Place lemon zest, lemon juice, and 30ml water in a small saucepan and simmer for 5 minutes. Take it from the stove and let it cool off.
- Remove the pumpkin from the seeds and the fibrous inside, peel and grate coarsely (makes about 250 g).
- Mix the pumpkin shavings with the preserving sugar in a saucepan. Cook over medium-high heat, stirring, for 4 minutes.
- Put the mustard flour, mustard, salt, and lemon juice in a bowl and mix into a smooth cream. Add the cream to the pumpkin and continue to cook for 1 minute while stirring. Season to taste, pour into jars, seal and allow to cool.
