Ingredients for 1 servings:

  • 300 g carrot(s)
  • 300 g celeriac
  • 50 g lovage
  • 25 g celery leaves
  • 25 g parsley
  • 3 cloves garlic
  • 150 g salt
  • 2 tbsp oil
  • some oil, for basting

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

The weights refer to cleaned, ready-to-cook vegetables. The weights for herbs refer to the picked leaves. Chop all ingredients as finely as possible; this is easiest done in a food processor. Mix the vegetable puree with salt and 2 tablespoons of oil. Pour into prepared, clean jars. Make sure no air pockets form. Smooth the surface and clean the edges. Pour a little oil over the vegetables to create a film of oil. Seal the jars and store in the refrigerator for safety.
