  • 3 kg tomatoes, fully ripe

Instructions

Wash the tomatoes and cut them crosswise with a sharp knife, then place them in batches in boiling water for a few minutes until the skin peels off. Remove the tomatoes from the water, peel off the skin, remove the green stems, and puree them finely in a slightly taller bowl. Return the pureed tomatoes to the pot and bring to a boil, then simmer for a few minutes. Depending on your intended use, you can also simmer the tomatoes longer to thicken them slightly. Rinse the screw-top jars with hot water, then immediately add the cooked tomatoes while they are still hot and seal them. Or: Boil in a preserving kettle at 95°C for 30 minutes. The time is calculated from the time the tomatoes are reached. The preserved tomatoes are perfect for pizza, tomato soup, tomato sauce, etc.
