Ingredients for 1 servings:
- 250 g flour
- 100 g powdered sugar
- 100 g butter
- 1 pinch of salt
- 1 egg(s)
- 1 egg yolk
- 1 vanilla pod(s), pulp
- 250 g honey
- 70 g butter
- 50 g powdered sugar
- 1 tsp cinnamon powder
- ½ tsp cardamom powder
- 1 tsp anise powder
- ½ tsp clove powder
- 1 pack of flavoring (Citroback) or
- 1 lemon(s), untreated, zest
- ½ tsp potash
- a little water, lukewarm to dissolve
- 1 egg(s)
- 350 g flour
- 1 tbsp honey for brushing
- Flour for working
- Water for brushing
Instructions
Working time approx. 2 hours; Rest time approx. 7 hours; Total time approx. 9 hours
refined and delicious Christmas biscuits (Low fat 30 – suitable), makes about 50 pieces
For the shortcrust pastry, sift the flour and icing sugar into a bowl. Add the butter, salt, egg, egg yolk, and the scraped vanilla seeds. Quickly knead everything into a smooth dough and shape into a ball. Chill for about 3 hours. For the honey cake dough, heat the honey and butter until the butter has melted. Sift the icing sugar into the mixture and stir in with the Citroback and spices. Allow to cool slightly. Dissolve the potash in a very small amount of lukewarm water, add it to the honey mixture along with the egg and flour, and stir until smooth. Chill for at least 6 hours (preferably overnight). Roll out each dough between two layers of lightly floured cling film into a 40 x 25 cm rectangle. Peel off the top layer of cling film from both doughs. Carefully brush the shortcrust pastry with 1 tablespoon of water. Place the honey cake dough, dough-side down, on top of the shortcrust pastry, and then peel off the top layer of cling film. Roll up the double dough rectangle from the long side, using the remaining cling film underneath to help. Place the roll in the freezer for 1 hour. Cut the dough into slices about 8 mm thick. Place the slices on a baking sheet lined with baking paper, leaving some space between them. Bake at 170°C on the middle rack for about 12 minutes. Remove from the oven and immediately brush with a thin layer of honey.
