Ingredients for 4 servings:
- 2 large chicken schnitzels, approx. 320 g total
- 100 g flour
- 90 g breadcrumbs
- 1 tsp baking powder
- 80 g Gruyère, grated, or other cheese of your choice
- 1 egg(s)
- 1 garlic clove(s)
- 50 ml sunflower oil
- 1 tbsp ketchup
- 1 tsp mustard
- 1 tsp, heaped honey
- Paprika powder
- salt and pepper
- possibly Tabasco (Habanero pepper), if required
Instructions
Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 5 minutes

Cut the chicken schnitzel into small pieces. For the marinade, beat 1 egg in a small bowl. Add the oil and press in the garlic clove. Add the ketchup, mustard, and honey, and season to taste. Pour the marinade over the chicken pieces, then cover and refrigerate for about half an hour. You can leave the meat in there for less or longer—but the longer the better. Now place the chicken in a plastic bag or bowl, add the grated cheese, and mix well. Then add the flour, breadcrumbs, and baking powder, and season to taste. Heat about 800 ml of frying oil in a deep saucepan and fry the marinated pieces of meat in batches for about 3-5 minutes until golden brown.
