Ingredients for 1 servings:

  • 100 g honey
  • 50 g butter
  • 1 tsp cinnamon
  • 1 tsp ground ginger
  • 1 pinch of cardamom
  • 1 pinch of clove(s)
  • 100 g almonds
  • 200 g flour (wheat flour type 405)
  • 2 tsp, leveled baking powder
  • 1 egg(s)
  • 75 g sugar, fine
  • 250 g powdered sugar
  • some water or rum
  • 1 tsp cinnamon

Instructions

Working time approx. 40 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 40 minutes

Christmas biscuits, makes about 60 pieces

Heat the honey, butter, and spices in a saucepan. Finely grate the almonds, sift in the flour and baking powder. Beat the egg and sugar with a hand mixer until creamy. Stir in the honey mixture. Then knead in the almond mixture. Cover the dough and chill for 1 hour. Sprinkle flour on a work surface. Roll out the dough; as it will be a bit sticky, pull a sock over the rolling pin and/or lightly flour the dough. Cut out cookies with scalloped edges or stars, moons, hearts, etc. Place on a baking sheet lined with baking paper. Bake the cookies in a preheated oven at 175°C (top/bottom heat) for about 12 minutes. Mix the powdered sugar with water or rum. Let the cookies cool and then cover with the powdered sugar glaze. Immediately sprinkle with some cinnamon powder.
