Elderflower jelly with flowers

Ingredients for 1 servings:

  • 12 elderflower umbels
  • 1 kg gelling sugar 1.1
  • 500 ml apple juice, unsweetened
  • 5 g citric acid
  • 250 ml mineral water

Golden yellow, very aromatic jelly with white flowers

Carefully pluck the florets from the unwashed flower heads, mix them with the gelling sugar, and let them steep for a while. Add apple spritzer (a mixture of apple juice and mineral water) and citric acid, bring everything to a boil, simmer for four minutes, skim off the top, and pour into twist-off jars. Turn the jars upside down and back on their feet several times until the gelling process begins and the florets float. The golden-yellow jelly with the white florets also makes a lovely gift and a lovely eye-catcher on the breakfast table.
