Hooksieler fish soup

Ingredients for 4 servings:

  • 400 g fish (redfish, cod or haddock)
  • 100 g bacon
  • 1 onion(s)
  • 1 stalk(s) leek
  • 4 tomatoes
  • 1 liter meat broth
  • 2 egg yolks
  • 1 cup(s) white wine
  • ½ lemon(s), the juice
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the fish into 1 cm thick strips, dice the bacon, finely slice the leek, and dice the (seeded) tomatoes. Slowly fry the bacon, sauté the diced onion in it until golden brown, add the leek stalks, and sauté for five minutes. Add the fish, cook for two minutes, and then add the tomatoes. Add the meat broth, simmer for five minutes, remove from the heat, and blend with the two egg yolks, whisked with the white wine and lemon juice. Season to taste with salt, pepper, and nutmeg.
