Ingredients for 4 servings:

  • 400 g cod fillet(s) (or similar white fish)
  • 200 g scampi
  • 2 tbsp butter
  • 1 onion(s)
  • 3 garlic cloves
  • 50 g bacon, diced
  • 150 ml dry white wine
  • 250 ml fish stock
  • 2 tbsp dried Italian herbs
  • some salt and pepper
  • 2 stalk(s) celery
  • 1 can tomato(s), chopped (approx. 400 g)
  • some Parmesan

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

simple – and tasty!

Chop the onion and garlic as finely as possible, and chop the celery stalks in a food processor. Melt the butter in a soup pot and sauté the onions and garlic over medium heat, stirring occasionally. Add the bacon cubes and chopped celery and continue to sauté for about 2 minutes, stirring frequently. Add the fish stock, wine, tomatoes, and Italian herbs, season with salt and pepper, bring to a boil briefly, then reduce the heat and simmer gently for about 10 minutes. Cut the fish into small cubes and add it. Cook for about 5 minutes until it is nice and translucent, add the shrimp, and heat again until they are really cooked through (color). Season to taste with a little grated Parmesan and serve! Of course, you can always replace the dried herbs with fresh ones (e.g. basil, parsley… depending on your taste).
