Horseradish Puree

The perfect horseradish puree recipe with a picture and simple step-by-step instructions.

  • 1 root Horseradish
  • 1 cups Buttermilk [0.5 L]
  • 1 cups Sour cream or Sour cream
  • 100 g Butter
  • 100 g Parsnips
  • 100 g Parsley root
  • Salt, nutmeg, lemon juice, pepper, sugar to taste
  1. Peel and chop the horseradish, parsnips and parsley root
  2. Simmer in salted water for about 1 hour
  3. Pour off (collect the broth) and puree
  4. Back in the saucepan, add the sour cream and the buttermilk and simmer for another 10 minutes while stirring
  5. Dilute with part of the broth and season with nutmeg, sugar, salt, pepper and lemon juice
