Hot sauce from Gambia

Ingredients for 4 servings:

  • 2 small onions
  • 4 cloves garlic
  • 2 spring onions
  • 10 Pepper, African, hot
  • ½ lemon(s), juice
  • 3 small cans of tomato paste, 2-fold concentrated
  • 3 tbsp, heaped mustard, medium hot
  • 2 tbsp vinegar
  • 2 stock cubes (fat stock)
  • 150 ml vegetable oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

simple, quick but very spicy

Puree the garlic, onions, spring onions, and hot African chili peppers thoroughly in a blender. Heat the oil and add the blended ingredients. Add the tomato paste, mustard, lemon juice, and vinegar and mix well. Crumble the stock cubes and add them. Simmer over medium heat for about 30 minutes. Stir regularly to prevent burning. Please measure carefully; the sauce is spicy!
