Tomato sauce with eggs

Ingredients for 4 servings:

  • 2 tbsp olive oil
  • 4 tbsp tomato paste
  • 4 bell peppers, hot
  • 1 tsp spice paste (harissa)
  • 4 cloves garlic
  • 1 tsp caraway (Karwia, garden caraway), ground
  • 6 eggs
  • Salt

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash the peppers, remove the stems, and chop into small pieces. Heat oil in a pan. Add the chopped peppers, tomato paste (previously diluted with a cup of water), harissa, ground karwia, crushed garlic, and salt. Simmer over medium heat. Add 2 eggs and mix them into the tomato sauce. Now add the remaining 4 eggs without stirring. Cover the pan and cook for another 3-5 minutes. Serve with pan-fried bread.
