How Does a Beer Batter Succeed?

The basic beer batter recipe involves flour, eggs, beer, and some oil. Light beer is best, as Pils makes the dough taste bitter. Sweet beer batter is also flavored with sugar, while the savory batter is flavored with salt and nutmeg.

To keep the dough fluffy, flour and sugar or salt are first mixed with the beer and egg yolk. Then oil is added and only then is the stiffly beaten egg white carefully folded in. The batter should end up with a thick consistency, comparable to pancake batter.

With the sweet version, you can prepare fruit in batter and with the savory version, you can bake vegetables, meat, and fish in beer batter. The snacks are dipped in the beer batter and then usually fried. Pancake batter can be prepared in a similar way to beer batter. This is particularly easy with our Thermomix pancake batter recipe.
