How to Cook Squid

If you want to buy whole squid commercially, you usually have to pre-order it. Before preparation, the sea creature must also be cleaned and gutted. In addition to the tentacles, the squid tubes are probably the most popular part of the animal in culinary terms. Fresh squid tubes must be stripped of their outer brown layer and spine. First pull the spine out of the tube with your fingers. Then peel off the skin in individual pieces until the entire tube is white. Then rinse the outside and inside under running water.

Alternatively, you can buy pre-cooked squid tubes. They are used to make calamari, fried squid rings – probably the most popular squid dish. Cut the tubes into rings about half a centimeter thick. Then roll them in flour, which you can season beforehand. Fry the rings in hot oil for about 30 seconds, then drain on paper towels. Accompanied by lemon and parsley.

But squid offers many more culinary possibilities. Cooked octopus, the largest species of squid, makes a nautical salad with a vinegar and oil dressing. You can also fill the tubes and then fry them. A mixture of rice and vegetables, for example, is well suited for a filling. A tomato-based sauce can also be flavored with pieces of squid and goes well with pasta or rice. The squid also enriches a paella with its strong aroma. Always make sure not to cook the squid too long, otherwise, it will quickly become tough.
