How to Pickle Walnuts

The still unripe, green walnuts are particularly suitable for pickling. You should harvest them before June 24th, St. John’s Day, and water them first.
To do this, pierce the walnuts several times with a needle, fill them in a tall container and cover them with cold water. Caution: Use disposable gloves, as the nuts stain your hands and nails.

The water should now be changed daily for a week to ten days – this will flush out the bitter substances. The nuts are then boiled in fresh water and then pickled in a broth made from one part water, one part sugar, and spices (optional, for example, cinnamon, cloves, and allspice).
