Hummus, Stuffed Grape Leaves, and Eggplant Paste
The perfect hummus, stuffed grape leaves, and eggplant paste recipe with a picture and simple step-by-step instructions.
For the hummus:
- 1 Do. Chickpeas
- 1 Do. Tahini
- 200 ml Lemon juice
- 3 Pc. Garlic cloves
- 2 tsp Salt
- 50 ml Water
For the stuffed grape leaves:
- Pickled grape leaves
- 300 g Rice
- 1 Do. Chopped tomatoes
- 1 Pc. Clove of garlic
- 1 bunch Chopped parsley
- 1 tbsp Tomato paste
- 1 tsp Salt
- 0,5 tsp Pepper
- 50 ml Olive oil
For the eggplant paste:
- Eggplant fresh
- 2 tbsp Paprika paste
- 3 tbsp Olive oil
- Salt
- Pepper
For the hummus:
- Mix all ingredients together.
For the stuffed grape leaves:
- Mix all the ingredients together and fill the vine leaves with them.
For the eggplant paste:
- Wrap the eggplant in aluminum foil and grill at 200 degrees for 30 minutes.
- Let it cool down and then peel the aubergine.
- Mix the inside of the eggplant with the rest of the ingredients.
