Storage: Reduce Grape Leaves

Instructions
 

  • Cut off the stalks of the vine leaves and check each leaf individually for insects. Do not wash the leaves.
  • Always place 7 sheets on top of each other and fold them (see photo) or roll them up. Put this folded in a glass. Proceed in this way with the other leaves until the glass is full. Close the cover well.
  • Place the jar in a saucepan with the lid facing down and fill in enough water so that the jars do not tip over. The glasses shouldn't touch.
  • Bring the water to the boil and boil it down until the leaves change color (approx. 30 min.). Then carefully take it out of the water and turn the glass over. Then let cool down completely. Only now draws a vacuum.
  • With larger glasses, the heat does not reach the bottom of the glass as well. You can see that when the color doesn't change. Then turn the glass over for approx. 5 minutes (in boiling water) and hold it with a kitchen towel if necessary.

You can do that with it

  • Wash the leaves before use. They are very suitable for stuffed grape leaves (sarma).
