Hummus bil Lahme
You can either use canned chickpeas or soak dried chickpeas in water overnight and then boil them for about 40 minutes until soft. Place the chickpeas in a bowl with the coarsely chopped garlic, lemon juice, and sesame paste or sesame seeds. Blend until all the ingredients are finely chopped and a puree has formed. To make the puree smoother, you can stir in the water from the pickled chickpeas a little at a time. Season the puree with salt, pepper, and allspice. Brown the minced meat in a little oil in a pan. Add a little salt, pepper, and allspice to taste. Pour the chickpea puree onto a flat plate and spread it around the edge, leaving space in the middle for the minced meat. Garnish with paprika, pine nuts, and pickled cucumbers. Freshly baked white bread or rolls go well with this starter. If you like, this dish can also be eaten as a main course. This serving is enough for two people as a small appetizer.
