Hungarian soy goulash

Ingredients for 4 servings:

  • 300 g soy, diced
  • 500 ml vegetable stock
  • 3 large onions
  • 1 bell pepper(s), red
  • 2 tbsp tomato paste
  • 1 tsp marjoram
  • 3 garlic cloves
  • ½ tsp caraway seeds
  • salt and pepper
  • Paprika powder
  • cornstarch

Instructions

Working time approx. 15 minutes; Rest time approx. 5 hours; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 6 hours 45 minutes

the vegetarian goulash for the whole family

Soak the soy cubes in the broth for 4-5 hours. Slice the onions and bell peppers into strips or rings and fry them until crisp. Add the tomato paste, herbs, and all the spices, along with half of the soaking broth, bring to a boil, and reduce by about 30%. Now add the remaining broth with the soy cubes, cover, and simmer gently for 60 minutes. Finally, thicken with a little potato flour. (You can also cook 3-4 diced potatoes from the beginning.) Serve with potato or bread dumplings, salad, or red cabbage.
