Ingredients for 4 servings:
- 500 g minced meat, mixed
- 2 slices of toast
- 2 m.-sized onion(s)
- 2 tbsp parsley, fresh or frozen
- 1 tbsp, sautéed marjoram, fresh, dried or frozen
- 1 egg(s)
- 500 ml cooking cream, 7%
- 1 cube of stock (fat stock)
- 1 clove(s) garlic
- 1 tsp sweet paprika powder
- 1 tsp, heaped salt
- some pepper
- 300 g mushrooms, fresh, brown or white
- 100 ml milk
- 1 tsp tomato paste
- some fat for frying (oil, vegetable cream, clarified butter or margarine)

Attention! I prepare the dish in a cast iron roasting pan/pot, which I can then put straight into the oven to cook. If you don’t have one, you can also use a casserole dish later. Soak the toast in the milk, dissolve the stock cube in 100 ml of water, and preheat the oven to 180 degrees Celsius (top/bottom heat). Slice an onion into half rings, slice the mushrooms, and set both aside. Finely dice the other onion and the garlic clove, lightly sauté with 1 tablespoon of parsley and 1 level tablespoon of marjoram, and then let cool slightly. Squeeze out the excess liquid from the toast and place it in a bowl with the minced meat. Knead together with an egg, paprika, salt, a little pepper (to taste), and the sautéed onion mixture. Season the minced meat to taste and add more seasoning if necessary. If you don’t like that, you can also fry a small meatball as a test and then season to taste. Form 6 equal-sized meatballs with wet hands and fry on both sides, but do not overcook them! Then remove from the roasting pan and set aside. In the same roasting pan/frying pan, sauté the prepared half onion rings, then add the mushrooms and fry both until lightly golden brown. Add the remaining parsley and tomato paste and sauté briefly. Deglaze with all of the cooking cream and the dissolved stock and bring to a boil briefly. Place the meatballs on the sauce and finish cooking in the preheated oven at 180 degrees Celsius for about 20 minutes. If you don’t have a heatproof roasting pan, you can also pour the sauce into a casserole dish, then place the meatballs on top and extend the cooking time by 5 minutes. Mashed potatoes, for example, go well with this.
