Ingredients for 4 servings:

  • 500 g mango(s)
  • 500 g blueberries
  • 1 vanilla pod(s)
  • 1 lemon(s)
  • 500 g gelling sugar 2:1

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 50 minutes

Peel the mangoes, remove the flesh from the stone, and cut into small cubes. Mix with half a scraped vanilla pod, the juice of half a lemon, and 250g of gelling sugar. Combine the blueberries with the other half of the scraped vanilla pod and the juice of the second half of the lemon, along with 250g of gelling sugar. Bring both mixtures to a boil in two separate saucepans for about 5 minutes, stirring constantly. Blend, let cool slightly, and layer into jars.
