Ingredients for 4 servings:
- 1 onion(s)
- 1 tbsp lard, or oil, for frying
- 200 g mushrooms or mixed mushrooms
- 1 tbsp tomato paste
- 1 tbsp flour
- 150 ml red wine
- 250 ml beef stock or vegetable stock
- 2 tbsp mushrooms, mixed, dried and powdered (2 tbsp mushroom powder)
- Salt and pepper, freshly ground
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Peel and dice the onion and brown it in hot lard or oil. Meanwhile, clean and finely chop the mushrooms, then add them and fry them. Once they are slowly browned, add the tomato paste, sift the flour over them and fry everything thoroughly until browned, stirring frequently. Then deglaze with the red wine and simmer, stirring constantly to avoid lumps. Now add the stock and mushroom powder and simmer for about 10 minutes. Instead of stock, you can also use 750 ml beef or vegetable stock. Then reduce this to about 250 ml. This sauce tastes great with meatballs, meatloaf, liver sausage, patties, etc., and with rice, mashed potatoes, pasta, spaetzle, etc.
