Ingredients for 2 servings:
- 4 beetroots, cooked
- 1 onion(s)
- 4 tbsp olive oil
- 2 tbsp honey
- salt and pepper
- Herbs of Provence
- 2 tbsp balsamic vinegar
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Slice the onion and the beetroot. Combine all the marinade ingredients, except the balsamic vinegar, in a cup and heat in the microwave for a few seconds. Then add the vinegar. Mix the beetroot, onion, and marinade and let it marinate. If you’re in a hurry, the salad also tastes great with canned beetroot.
