Ice cream with spices

Ingredients for 8 servings:

  • 200 g bread(s) (Pain d’épices, French spiced bread)
  • 800 ml milk
  • 130 g sugar
  • 1 pinch of salt
  • 30 g honey
  • 8 egg yolks

Instructions

Working time approx. 10 minutes; Rest time approx. 8 hours; Cooking/baking time approx. 30 minutes; Total time approx. 8 hours 40 minutes

Ice cream with French spiced bread

Cut the spiced bread into small cubes and soak in the milk. Purée with a hand blender. Whisk the egg yolks with sugar, salt, and honey until frothy. Heat the milk-bread mixture until just below boiling point and slowly pour it into the yolk mixture, stirring constantly. Heat again in a bain-marie until the mixture begins to thicken at 80°C (smoothen to form a rose). Stir until cold in ice water and chill in an ice cream maker. Let it harden in the freezer. Chill in the refrigerator for half an hour before serving.
