Iceberg mango salad with an orange-lime dressing and mint

Ingredients for 4 servings:

  • 1 head of iceberg lettuce
  • 1 mango(s)
  • 150 g sheep’s cheese
  • 1 orange(s), untreated
  • 1 lime(s)
  • 3 tbsp balsamic vinegar, white
  • 4 tbsp olive oil, mild
  • 10 leaves mint, fresh
  • salt and pepper
  • Sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Grate the orange zest and juice the orange, as well as the lime. Mix the juice with the vinegar, oil, and orange zest. Finely chop the mint leaves and add. Season with salt, pepper, and sugar. Peel the mango and cut into cubes (approx. 1 cm) and add to the dressing. Dice the feta cheese and add to the dressing. Finally, finely chop the iceberg lettuce and toss everything together. Delicious with some ciabatta as a light dinner or as a side dish.
