- 500 g watermelon(s)
- 500 g strawberries
- 200g edamame
- 180 g feta cheese
- e.g. mint

Prepare the edamame (heat frozen edamame in boiling salted water or in the microwave). Dice the watermelon. Wash, hull, and finely chop the strawberries. Dice the feta cheese (I like to use a light version; it doesn’t affect the flavor). Mix all ingredients and divide them between plates or bowls. Garnish with mint leaves, if desired. This recipe makes about 4 side dishes or two main courses. 212 kcal per serving as a side dish.
