- 6 stalk(s) leeks, small, otherwise larger ones cut crosswise

- 1 tsp oil

- 1 tbsp bread roll(s), grated

was my substitute asparagus in GDR times, super easy and quick to prepare – suitable for WWII
I mostly prepare my dishes with low fat, but you can always increase the fat content to your liking! A little more butter for frying tastes great in this recipe! It’s optional, but not essential! Clean the leeks of any dirt and remove the coarse green parts. Steam the leeks briefly, like asparagus, in a little salted water with the lid on until almost cooked through. Be careful, as they overcook very quickly! You can cook them more gently in a steamer or in a Toppits steamer bag at 600W for 3 minutes! The outer skin of the leeks should be soft, but not overcooked, and the leeks should still be breaded. Dip them in an egg beaten with a little water, salt, and pepper, and then coat them in breadcrumbs. Place them in hot fat, fry until lightly browned all over, and cook or simmer until reduced in heat! Delicious as a vegetable side dish with meat or fish, or simply as a snack with bread!
