Indian: Aloo-Baingan .. or Potato Meet Eggplant Under Sun of Northern India

- 4 cm Ginger – finely chopped
- 3 tbsp Oil
- 3 Pc. Medium-Sized onions – cut lengthways into thin strips
- 3 Pc. Small cloves of garlic – squeezed
- 1 Pc. Hot peppers – finely chopped
- Ground spices: 0.5 tsp each of curry, cumin, coriander seeds, turmeric
- As well As paprika powder and garam mAsala (the hot spice)
- 1 tsp Salt
- 1 Pc. Eggplant – in bite-sized pieces
- 3 Pc. Medium-Sized potatoes – cut into bite-sized pieces
- 1 Pc. Large tomato – roughly chopped
- Coriander herb
- Yogurt
- Sauté the ginger in the oil until it is translucent.
- Add the onions and cook until they start to turn brown.
- Add the garlic and peppers and sauté briefly.
- Do the same with the spices.
- Now add the potatoes and aubergine and mix well, sauté a little
- Now add the tomatoes and mix well.
- Cook on a low flame with the lid on, stirring occasionally, and then season to taste.
- Serve with yogurt and coriander.
- Indian chapatis or naan go very well with this. The dish is delicious and always goes down very well with guests. As with all Indian recipes, you can of course vary. For example, you can determine the spiciness yourself and if you don’t like coriander, just leave it out.
