Ingredients for 4 servings:

  • 400 g turkey meat (more or less meat to taste)
  • 1 can pineapple pieces
  • 1 sweet apple
  • 250 ml broth
  • 1 tbsp curry powder
  • 1 tsp cayenne pepper
  • 1 can coconut milk
  • 1 small onion(s)
  • 1 cup rice, large, long grain rice
  • possibly flour

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Curry meat with pineapple and apple

Chop the onion and fry until translucent. Add the finely chopped turkey and fry until browned, then deglaze with the coconut milk. Add the pineapple chunks (or, if you like it sweet, along with the pineapple juice). Otherwise, add the stock as liquid. Season with curry, cayenne pepper, salt, and pepper. Let the whole thing simmer uncovered for about 10 minutes. Peel the apple, cut it into small pieces, and add it at the end to retain its bite. Season to taste. If the sauce is too runny, thicken with a little flour and bring back to a boil. If there isn’t enough sauce, add a little more stock. Serve with rice.
